Shaved Yellow Beet Salad

We love new salads all year round, but shaved yellow beets are our all time favorite.

The thing that makes this salad is, (as usual) the dressing. I usually encourage substitutions, but this dijon vinaigrette is a MUST have.

With this salad, I start with beets, but it’s also great if you add other shaved vegetables as well.

Some additions I've tried include: fennel, cucumber, carrots, radish, onion, kohlrabi, or celery. They're all great!

Shaved Yellow Beet Salad Recipe

Servings: 4 people

Prep Time: 15 minutes

Cook Time: 15 minutes

Ingredients

Salad

  • 3 large yellow beets, shaved (can sub for pink or candy cane beets. red beets will change the salad flavor and look a bit so we don’t recommend those)

  • equal parts shaved veggie of your liking. (fennel, cucumber, radish, carrot, etc.)

  • 1/2 bunch parsley, chopped

Dijon Vinaigrette Dressing

  • 2 T dijon mustard

  • 2 whole lemons, juiced

  • 3/4 - 1 cup olive oil (start with 3/4 cup and add to taste)

Instructions

  1. After washing the beets thoroughly, use a mandolin (or sharp knife) to shave thin slices of beets and any other veggies you are using.

    **No need to peel the beets! Leave the skin on!

  2. Chop parsley and add to salad.

  3. Season with salt & pepper

  4. Add dressing and enjoy!

Recipe Notes

Items that can be prepared ahead: Dressing can be made in bulk and saved in your fridge ahead. Mason jars are great for this!

If you have a mandoline, this is a great recipe to break it out. It cuts down the prep time a ton!

Pro Tip: If you have some tops to your veggies, USE THEM! Add in radish greens, some carrot tops, fennel tops or even beets greens!
